AVOCADO TOAST WITH A POACHED EGG

We’ve all experienced the crazy trendy Avocado Toast lately.

Naturally, welcome to your brunch for tomorrow…
Avocado Toast with a Poached Egg.

Let me explain myself first.

I have been seeing so many instagrams, posts, pinterests and more of Avocado Toast in the past few weeks. Why it’s good for you and how scrumptious it looks at the cutest little restaurants every damn day.

Of course I’m over here thinking: okay it basically just looks like smushed avocado on toasted bread, am I right? 

BUT there has been this slight curiosity of mine with this famous Avocado Toast…

A poached/fried/lightly sautéed/over easy (how ever you like it)
egg on the very tip top.

Now that is something new.

In South Africa I grew up eating Avocado toast, we called it Avo on Toast but I was a regular. At my grandparents I have memories of us slicing the avocado, putting it on a piece of toast (my Grandpa slightly smushing it) and drizzling it with balsamic vinegar. It was so good.

So clearly I know all about this Avocado Toast thing, I just stored it in my brain for a rainy day and then re-introduced it to my life.

Although I recommend the “South African” version this poached egg on top version was literally more heavenly then I could of imagined.

The runny yolk (my favorite) was perfect with the creamy ripe avocado that had a slight citrus hint of lime juice with the red pepper flakes balancing out the steady flavors of the toasted sourdough bread. 

Honest opinion: this is a win.
