GRILLED CORN WITH BACON BUTTER AND FETA CHEESE

This corn recipe came from How Sweet It Is.
We were making corn and I have been feeling a little weary of plain corn on the cob with butter, aaromat, and pepper.
And even though it is my vacation OF COURSE I wanted to cook and blog :)
The recipe calls for cotija cheese but Fresh Fields Newton Farms market did not stock that cheese so I replaced it with some fresh crumbled feta.
This corn was so tasty and the toppings delicious.
I think the reason it was so yummy was because:
bacon
butter
and cheese.
Can’t go wrong with those three combinations.
And I even got to use REAL BACON (not the microwave kind).
So this was excitement!
The corn was grilled which was done in the oven because the grill was a no.
I just grilled it on some tinfoil with olive oil and some pepper. Very simple, very juicy. The corn even blackened on some pieces which gave it a great taste and left the corn juicy and perfectly cooked.
I would recommend this recipe, and we still have some bacon butter left over so I’m definitely cooking that with some more corn this week.
Maybe I can get some more photos of the finished product then.
Unfortunately the lighting in the kitchen was horrible (the picture below).
And the pictures are blurry, not my best.
I also skipped the cilantro part just because we didn’t buy any.
(we biked to the grocery store and were limited on the amount and type of groceries considering this heat!).

feta cheese
two pieces of real bacon
three tablespoons butter
olive oil
pepper
Fry the bacon, make it crispy. Crumble into small pieces.
Soften the butter, add bacon crumbles.
Brush corn with olive oil and pepper.
Grill in oven on “broil” setting. Turn corn until it starts to brown and blacken.
Remove corn. Brush with bacon butter. Roll in feta.
