BLACK BEAN RASPBERRY CHIPOTLE DIP

Black Bean Raspberry Chipotle Dip is today’s flavorful topic!

This dip is fantastic and full of so much flavor and goodness.
It’s a creamy dreamy dip made with cream cheese, pepper jack shredded cheese and a sweet and spicy chipotle sauce.

Black beans are spiced with cumin, chunky sea salt, and pepper then heated until sizzling.

Beans are spread all around the outer edges of the cast iron skillet. Cream cheese is softened then combined with caramelized onions and sauteed garlic. A well is made in the center cast iron skillet for the salty cream cheese. Raspberry chipotle sauce is poured all over the well and it’s finished off with shredded pepper jack.

Baking this beauty creates a super cheesy scrumptious layer on top that is just begging to be broken.
This Black Bean Raspberry Chipotle Dip is also gluten free and vegetarian!

Fresh cilantro keeps the dip vibrant and gives a punch of flavor in each bite. Served with tortilla chips this dip is a serious game changer.
Not to mention it’s scary simple and quick to pull together.

Ingredients
- 1 CAN BLACK BEANS, DRAINED & RINSED LIGHTLY
- 1 TEASPOON CUMIN
- 1 8 OUNCE CREAM CHEESE, 1/3 LESS FAT, SOFTENED
- 1 10.5 OUNCE RASPBERRY CHIPOTLE SAUCE, (WE USED FISCHER & WEISER BRAND)
- 1/3 SWEET YELLOW ONION, FINELY CHOPPED
- 1 HEAPED TEASPOON GARLIC
- 1 TABLESPOON OLIVE OIL
- 1/3 CUP SHREDDED PEPPERJACK CHEESE
- SEA SALT&P
- TORTILLA CHIPS TO SERVE
Instructions
- HEAT BLACK BEANS IN A SMALL PAN WITH CUMIN, SEA SALT, AND PEPPER UNTIL SIZZLING, SET ASIDE
- BROWN ONIONS IN A CAST IRON PAN UNTIL SOFT IN OLIVE OIL
- TOSS IN GARLIC AND HEAT UNTIL FRAGRANT
- COMBINE ONIONS AND GARLIC WITH SOFTENED CREAM CHEESE AND MIX
- PLACE CREAM CHEESE IN THE CENTER OF THE CAST IRON SKILLET, SURROUND WITH BLACK BEANS
- POUR RASPBERRY CHIPOTLE SAUCE OVER CREAM CHEESE DOME AND COVER WITH SHREDDED PEPPER JACK CHEESE
- BAKE AT 400 DEGREES FOR 15 MINUTES UNTIL BUBBLING
- SERVE WITH TORTILLA CHIPS
