CHICKEN SOUVLAKI SALAD

Ever since I started this healthier lifestyle of mine (going on 3 months now) I decided to try incoporating more salads into my weekly meal lineup.
Now this is quite difficult for me because my loveable other half doesn’t love green things like lettuce and basically all other vegetables.
So I try to use a yummy meat and other scrumptious toppings, like feta, to distract him from the fact we are eating salads made from lettuce.
I honestly try to plan a “salad” with wonderful toppings at least once a week. But I have to be creative.
And we all know my love for anything greek related, which is why I am sharing an easy chicken souvlaki salads recipe today.
The chicken was marinated in plain greek yogurt, minced garlic, lots of lemon juice, dried oregano, and freshly cracked pepper. One of the best AND easiest marinades that exists and my usual go to for all things greek related.
This chicken is the perfect salad topper. I love to have this chicken chopped and piled high on those warm pitas I am always mentioning. Basically you can use this chicken on top of anything. I literally mean anything.
This chicken was skewered on wooden sticks and grilled on a hot fire. The other chicken was marinated as well but sauteed instead.
The best thing about this yummy grilled chicken is the little pieces of char and black bits that give the chicken chunks extra flavor from the grill grates.
The “salad” part of this post is pretty simple; its a mixture of chopped fresh romaine, chopped roma tomatoes, cucumber, and lots of crumbled feta.
I drizzled the salads with a cheater salad dressing. I used Zoe’s Kitchen greek dressing and mixed it with plain greek yogurt, and minced garlic. The dressing paired fabulously the marinated chicken and bright veggies.
To give you a little insight on what happened with the actual eating of these bowls of greens… AU ate an entire salad.
He really did.
However, he picked out all the little cucumber squares and placed them in my bowl…
Yeah he did that too.
I think we made some progress though. He devoured the chicken (duh), ate the romaine, tomatoes, scarfed down the feta, and drowned it all in the zesty dressing.
I remain proud of him anyways!
CHICKEN SOUVLAKI SALAD
Ingredients
CHICKEN
- 2 chicken breasts
- 1/4 cup plain nonfat greek yogurt
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- 1 teasoon minced garlic
DRESSING
- 1/4 cup non fat greek yogurt
- 1 teaspoon minced garlic
- 1/4 cup Zoe's Kitchen greek dressing
SALAD
- 4 cups chopped romaine
- 1 large chopped roma tomato
- 1/2 cucumber
- crumbled feta for serving
Instructions
CHICKEN
- Cut chicken into 1" cubes, place in a bowl. Combine greek yogurt, lemon juice, oregano, and garlic with the chicken. Mix and let marinate for 30 minutes.
- Skewer chicken onto wooden sticks. Grill chicken until cooked on the inside and charred slightly, about 8 minutes total.
DRESSING
- Combine greek yogurt, garlic, and greek dressing in a small bowl. Mix until well combined with a whisk.
SALAD
- Combine romaine, tomatoes, cucumber, and feta in 4 bowls/plates.
- Serve chicken on salads with dressing.
