COPYCAT CHIPOTLE GUACAMOLE

Copycat Chipotle Guacamole is my ABSOLUTE favorite guacamole recipe of all time.
We’ve posted this recipe before in our Chicken Burrito Bowls but we felt this one was so SPECIAL it deserved it’s own post.

It’s no secret that AU and I love Chipotle but there’s just something to be said about the guacamole they serve. Even if it is extra!

That extra taste and extra charge is actually quite simple when it’s broken down.
We were surprised how basic and easy this recipe actually is.
And this is the official Chipotle Guac recipe!

Ingredients are minimal, but flavor is oh so perfect!
It’s so creamy and the perfect blend of crunch to spiciness.

Finely chopped red onion, chopped jalapeno’s with seeds, cilantro, lime juice, and salt are all tossed with smashed ripe avocados.

And that’s literally it.
It’s so so so sooooooo good and we can’t stop eating it.
Try it with these Quick Shrimp Tacos to boost flavor or with our favorite tortilla chips from Food Lion! (fried in store and only $2.99 and the actual best ever!)

Notes
IF AVOCADOS ARE NOT QUITE RIPE YET (BRIGHT GREEN/YELLOW TOP) PLACE IN A BROWN PAPER BAG, FOLD CLOSED, AND PLACE IN A DARK SPOT OVERNIGHT (I DID THIS EXACT THING FOR THIS RECIPE!)
FOR LESS SPICY GUACAMOLE: ONLY USE HALF THE JALAPENO SEEDS OR NO JALAPENO SEEDS.
SAVE ONE PIT TO PUSH INTO GUACAMOLE AFTER MAKING, KEEPS GUACAMOLE LOOKING GREEN & FRESH.

Ingredients
- 2 MEDIUM AVOCADOS, RIPE
- 2 TEASPOONS FRESH LIME JUICE
- 2 TABLESPOONS CILANTRO, CHOPPED
- 1/4 CUP RED ONION, FINELY CHOPPED
- 1/2 JALAPENO, FINELY CHOPPED WITH SEEDS
- 1/4 TEASPOON SEA SALT
Instructions
- USE RIPE AVOCADOS, SHOULD BE SLIGHTLY FIRM BUT A LITTLE SQUISHY TO THE TOUCH. REMOVE THE TOP STEM TO SEE IF AVOCADO IS RIPE:
- - BRIGHT GREEN/YELLOW: NOT RIPE
- - MID GREEN/NO BROWN: JUST RIPE
- - BROWNISH: OVER RIPE
- CUT AVOCADOS IN HALF, REMOVE HALVES AND PLACE IN A BOWL (WITHOUT PIT) AND COVER WITH LIME JUICE AND SALT
- USING A FORK ON TOP AND A SPOON ON THE BOTTOM, SMASH AVOCADO BETWEEN UNTIL SMASHED/CHUNKY (DON'T OVER SMASH OR MUSH)
- ADD ONION, CILANTRO, AND JALAPENO, FOLD TOGETHER GENTLY (GUACAMOLE WILL BECOME SLIGHTLY MORE SMASHED IN THIS STEP SO FOLD SLOWLY)
- TASTE HERE, I NORMALLY ADD A SPLASH OR TWO EXTRA OF LIME JUICE AND AN EXTRA PINCH OF SALT (DEPENDS ON AVOCADO SIZE)
