EASY SPAGHETTI CARBONARA

Easy Spaghetti Carbonara made BETTER with lighter ingredients and delicious crispy bacon!

We all love a good Spaghetti Carbonara but not all the fat and grease that comes with the heavy meal!

Enter THIS Easy Spaghetti Carbonara. It’s made with the real deal crispy bacon (that good good stuff). BUT the creaminess still comes from fat free half and half and it makes it so much lighter and less oily.

Fresh shaved parmesan with the addition of eggs make the base of this pasta dish. And it’s just fabulous.

You get all the flavors and all the yummies of a normal Spaghetti Carbonara but you feel so much better after licking your plate clean.

We added some chopped tomatoes for freshness and just loved the bite of flavor they gave the whole dish. Fresh cracked pepper and MORE shaved parmesan to garnish made it even more gourmet.
Whip this up in thirty minutes for an easy quick gourmet meal!

Notes
ADAPTED FROM GREAT FOOD FAST
Ingredients
- 10 PIECES OF BACON, CUT INTO 1/2″ STRIPS
- 1 POUND THIN SPAGHETTI
- 3 LARGE EGGS
- 1 CUP PARMESAN, FINELY SHREDDED + MORE FOR GARNISH
- 1/2 CUP FAT FREE HALF & HALF
- S&P
- 1/2 CUP RESERVED PASTA WATER
- CHOPPED TOMATOES FOR GARNISH
Instructions
- PREHEAT OVEN TO 425 DEGREES
- COVER BAKING SHEET WITH TIN FOIL, LAY CUT BACON IN A SINGLE LAYER AND BAKE FOR 12-15 MINUTES UNTIL CRISPY, FLIP HALFWAY THROUGH
- WHILE BACON IS BAKING, HEAT WATER IN A LARGE POT AND SALT
- ONCE BOILING, ADD NOODLES AND COOK ACCORDING TO PACKAGE DIRECTIONS
- COMBINE EGGS, HALF & HALF, AND 1 CUP PARMESAN, S&P; WHISK TOGETHER AND SET ASIDE
- ONCE BACON IS COOKED, REMOVE AND PUT ON PAPER TOWELS AND BLOT OIL
- SEPARATE A FEW PIECES OF BACON FOR GARNISH FROM THE MAIN PILE
- AFTER PASTA IS COOKED, RESERVE 1/2 CUP WATER FOR THE SAUCE AND DRAIN PASTA QUICKLY
- WORKING QUICKLY, TOSS PASTA BACK INTO THE POT AND POUR IN SAUCE
- USING TONGS, TOSS NOODLES AND SAUCE QUICKLY ALLOWING THE EGG MIXTURE TO COOK WITH THE HOT WATER, MIX UNTIL COMBINED
- ADD BACON, PINCH OF SALT, AND FRESH CRACKED PEPPER
- IF SAUCE IS TOO THICK, ADD IN A LITTLE PASTA WATER AND MIX, IF IT’S SAUCY ENOUGH DON’T ADD EXTRA PASTA WATER
- GARNISH WITH CHOPPED TOMATOES AND MORE PARMESAN
