Did you know that most BBQ restaurants are closed on a Sunday…

I had no idea they were all closed and when I came up with the fantastic idea to pick up some hush puppies to compliment AU’s famous BBQ (coming to a blog near you very soon!!), I was very disheartened.

Instead of going to Cookout like AU suggested (I don’t like their hush puppies) I decided to take on making our own. How hard could it be?

I ended up finding out that hush puppies are quite simple and the ingredients are easy to come by.

This started our homemade hush puppy adventure.

The only things I didn’t have for this recipe were corn meal (probably the most important one) and a jalapeno (although AU has an amazing garden in our backyard right now, and yes there is a jalapeno plant in the mix).

Hopefully it will bloom and give us some spicy green chilies to cook with this summer!

Let me tell you a little story…

We were at Caswell Beach with a bunch of friends last month and we went to this awesome little restaurant called Fishy Fishy. AU and I ordered jalapeno hush puppies as an appetizer and they were literally heavenly. They melted in our mouths as we dunked them in ranch (because really there is no other way to eat hush puppies).

So that is where the jalapeno comes from.

Jalapeno chunks gave the little crunchy balls an awesome addition with a little spicy kick. I have been digging spicy things lately, but not too spicy because my lips literally burn themselves off.

I used some of the little seeds in the jalapeno to make it slightly spicier and to spread the goodness around but you can leave them out if you just want the little chunks instead.

We used our handy old fryer (don’t judge) BUT you can also use a pot filled to the top with 2/3 oil instead. Our fryer is filled with peanut oil but there are many oils you can choose to fry in, some people prefer vegetable oil. AU chooses peanut oil. I don’t complain (he’s the frying master, not me).

Tip: do not over fry these, they will burn and taste gross. If they start floating to the top before the 4-5 minutes are up, take them out and break them open. If the center is still wet fry them for a minute longer. Then don’t forget to drain them on paper towel.
