BBQ BEEF BULGOGI BOWLS

Beef Bulgogi Bowls have become a favorite way of mine to eat a healthy rice bowl these days.
Fresh, super easy to prepare and chock full of good ingredients, this bowl should be on your menu.
Also, who doesn’t want to stuff this steak rice bowl into their face (other than me)…?
Marinated skirt steak in this healthy bowl might be the best part; it’s garlicky, spicy, and sweet with brown sugar.
BBQ beef bowls are so tasty, the meat is marinated and there are so many toppings that never end.

This BBQ Rice bowl has slow cooked beef instead of sautéed but the flavor is WOW and so juicy.
Peanut butter makes its debut in this sauce mixed with fresh lime juice and soy sauce.
It’s tangy, a little sweet and creamy from the blended peanut butter.
Spices come through with sambal oelek in the peanut sauce and steak marinade giving the bowl a little kick.
Garnishes make the day considering the base is just two things: healthy brown rice and marinated steak.
Poached eggs, homegrown basil, red cabbage, sliced avocado, sesame seeds,
and peanut sauce come through for the win as all the necessary garnishes in this recipe.

Ingredients
STEAK
- 1 cup soy sauce, low sodium
- 1/3 cup brown sugar
- 1 tablespoon sambal oelek
- 1 teaspoon ground ginger
- 2 teaspoons minced garlic
- 2 tablespoons sesame oil
- 2 pounds skirt or flank steak, sliced thinly
- sesame seeds
PEANUT SAUCE
- 1/2 cup creamy peanut butter
- 2 tablespoons sambal oelek
- 2 tablespoons rice vinegar
- 1 tablespoons soy sauce, low sodium
- 2 limes, juiced
- 1/4 cup water
BOWLS
- brown rice
- red cabbage, sliced
- 1 avocado, sliced
- 4 poached eggs
- basil
- sesame seeds
Instructions
STEAK
- Combine all steak ingredients, except sesame seeds, in a bowl and marinate for an hour or overnight.
- Heat a large pan with 1 tablespoon sesame oil and cook steak 2-3 minutes on each side.
- Remove from heat and cover with sesame seeds.
PEANUT SAUCE
- Blend all ingredients until smooth.
- BOWLS.
- Combine rice, steak, poached egg, cabbage tossed with S&P, sliced avocado, and basil.
- Drizzle with peanut sauce and garnish with sesame seeds.

Whip this up any day of the week for a fast, fun, and healthy rice bowl.
