GRILLED LEMON CHICKEN FLAT BREADS

GRILLED LEMON CHICKEN FLAT BREADS are on the menu tonight.
I am sure you all know my love for anything on a pita. The endless
varieties and ways you can eat a pita are my absolute favorite thing about them.
Every time I see a pita recipe anywhere I just have to hit PIN!
Not only are pitas a blank slate but they’re soft when warmed to perfection,
not too bready and just the perfect addition to any meal.
I have so many good pita recipes it’s hard to choose just one favorite.
Any pita pizza with olive oil, pasta sauce/pizza sauce and lots of
shredded mozz but specifically this Margherita Pizza in particular.
The base to any and every dip ever like this White Bean Dip or this Homemade Hummus.
Using it as a bread base for sandwiches like these
Chicken Curry Pitas with Nectarine Chutney or these Indian Spiced Chicken Burgers.

I would have to admit to you all that this was one the best things I have made recently.
The chicken is marinated overnight in a simple but flavorful garlic marinade, a quick mayo greek yogurt
sriracha sauce is drizzled on top and the peppery arugula pulls it all together on a toasted pita.
This recipe is easy and basic and has a small tiny list of fresh ingredients.
I think that’s the main reason that I like this recipe so much.
I was a little taken aback at how simple this recipe was that I wasn’t really expecting much with it.
I thought it might be a little bland and tasteless.
But was I oh so wrong!!
The chicken really was perfectly flavored and all it needed was
the sauce, sliced tomato, and fresh springy arugula.
Have I convinced you to make this yet…?
Grilled in this case could be grilled outside but I used our new grilling pan
and it is awesome. You need one. It created perfect grill marks, a little char,
and cooked the chicken until tender and ready to rip off the skewer.
GRILLED LEMON CHICKEN FLAT BREADS
Notes
I like to use tin foil to roll my pitas to keep all the good stuff inside.
Ingredients
PITAS
- olive oil
- 2 large chicken breasts
- 1 teaspoon minced garlic
- zest of a lemon
- 1 tablespoon lemon juice
- S&P
- 1/2 teaspoon oregano
- 1/2 teaspoon cumin
- 1/4 teaspoon paprika
- 1/4 teaspoon coriander
- 4 pitas
- arugula
- roma tomato, sliced
SAUCE
- 1/2 cup mayo
- 1/2 cup plain nonfat greek yogurt
- 1 1/2 teaspoon minced garlic
- 3 teaspoons sriracha
- 1/2 teaspoon lemon juice
- pinch of cayenne pepper
- S&P
Instructions
- Combine all ingredients from garlic to pitas in a medium sized bowl.
- Cut chicken into 1" cubes and toss in sauce.
- Marinate overnight or for an hour covered in the fridge.
- Prepare sauce by combining all sauce ingredients in a small bowl, whisk until mixed.
- Skewer chicken onto 4 skewers evenly.
- Pour a little olive oil into a grill pan and heat.
- Cook skewers for 5 minutes on each side and keep turning to let them char.
- Remove skewers and let them rest, grill pitas in same pan to heat.
- Assemble flatbreads with sauce, one skewer of chicken, tomato, more sauce, and arugula.
