PICKLED STRAWBERRIES ON TOAST

The sun is out, spring is springing, flowers are budding, and I’m clearly ready for strawberry season!

While I wait these cold mornings out, I wanted to share this absolutely fabulous unique PICKLED STRAWBERRIES ON TOAST recipe with you. So when strawberry season is upon us, you have something already lined up in your recipe book for all your strawberries that you pick.

Every year we go strawberry picking with Ollie and some of our really good friends and it’s hands down one of my absolute favorite things we do. The strawberry farm we go to has the most delicious fresh, sweet, perfeclty ripe strawberries. And we always love filling up our box to the rim while Ollie eats about a box himself, from farm to mouth, LITERALLY!

We’ve picked strawberries for a few years now and it’s just the best family outing to do. If you’ve never gone before, here’s your push to go. There are strawberry farms all over, just do some research and it’s wonderful to support our local farms and local produce!

We love going to Ingram Farm in High Point, NC.

With that being said, every year we get SO MANY STRAWBERRIES that I don’t even know what to do with them.

We always have the go to recipes lined up; Strawberry Shortcake is always first, OF COURSE!, No Bake Strawberry Chocolate Tart, a strawberry dump cake (SO GOOD AND EASY!), lots and lots of smoothies (we freeze the ripe strawberries we don’t eat that day!), and chocolate covered strawberies. But I’m always wondering what else can we make?! There has to be something else that’s delicious and can use up some of these strawberries?!

I came across these Pickled Strawberries on Pinch of Yum one day and I thought, okay that’s it.

THAT’S what I’ve been looking for!

Fresh sliced strawberries are soaked and “quick pickled” in white balsamic vinegar, which is so unique! Paired with sugar, spicy peppercorns, and salt, duh! The pickled strawberries are so interesting in flavor; slightly sweet and so juicy but with a bright punch of vinegar. They can be used in so many different ways but our favorite is on toast.

Creamy goat cheese slathered on toasted sour dough bread, drizzled with honey and sprinkled with thyme (dried or fresh works perfectly here!). The flavor profile bursts in your mouth and the creaminess of the goat cheese with the sweet strawberries is out of this world, honestly.

I have literally been obsessed with everything Pinch Of Yum lately, she has the absolute best flavor pairings!

Pair these Pickled Strawberries on Toast with something bubbly; perfect sparkling water or sparkling wine and enjoy some sunshine this weekend!


PICKLED STRAWBERRIES ON TOAST

Ingredients

PICKLED STRAWBERRIES

  • 1/3 CUP WHITE BALSAMIC VINEGAR
  • 1 TABLESPOON WHITE SUGAR
  • 1 TABLESPOON BLACK PEPPERCORNS
  • 1 1/2 CUPS STRAWBERRIES HALVED
  • PINCH SALT
  • WATER TO FILL THE REST OF THE JAR

TOAST

  • 6 PIECES SOURDOUGH SLICES
  • 1 4 OUNCE GOAT CHEESE LOG
  • FRESH OR DRIED THYME
  • HONEY FOR DRIZZLING
  • SALT TO TASTE
  • OLIVE OIL
  • UNSALTED BUTTER

Instructions

PICKLED STRAWBERRIES

  • Add all ingredients to a jar and shake very gently.
  • Place in fridge for 2 hours. Use within 12-24 hours to make sure they're not too mushy.

TOAST

  • Fry sourdough slices in olive oil and butter until golden brown and crispy. Cover with a layer of goat cheese, top with strawberries and smoosh slightly down very lightly.
  • Top with thyme, a drizzle of honey, and a slight pinch of salt.

Harris Teeter, Walmart or Publix have it!

HOW LONG ARE THE PICKLED STRAWBERRIES GOOD FOR?

Once pickled, store in the fridge for up to two days.

WHAT CAN I USE INSTEAD OF GOAT CHEESE?

Cream cheese, mascarpone, or whipped feta would work beautifully instead of goat cheese.
