LIME MARINATED STEAK TACOS WITH PICO DE GALLO

I have a way to make my steak & it always involves a juicy marinade.
I have a little secret: there is this not so expensive steak at HT (and if you’re not a steak snob you might like it too) and it goes nicely with my marinade.
The steak I usually buy is top sirloin steak, it usually costs about $5/$6 for two smallish steaks. Now this is extremely reasonable and the label says “for marinading”. You might think “oh you have to marinade them?”- yes you do, but who doesn’t love marinated steak [ESPECIALLY WHEN YOU ONLY HAVE TO MARINADE IT FOR AN HOUR].
So here’s a spin on the usual marinade- I had to make it a little unique for steak tacos!
The {go to} marinade I use is a mixture of [garlic] [soy sauce] [olive oil] & [red wine vinegar] and let me just tell you, that is some of the best steak I have eaten when it is soaked in those juicy sauces. I also love this marinade because it is not crazy unhealthy and it involves some light sauces to give you great flavor. Unfortunately there is not a grill at my apartment so I (or AU) tend to sear the steak in an open faced pan and its fabulous, but if you have a grill, turn that baby on!
Tonight this flair on marinated steak took a different turn, starting with the steak cut. THIS TIME I used flat iron beef chuck- it was slightly fatty in one line but for the reduced cost we dealt with cutting those pieces out after cooking! It was on sale for $4.95 for 3 solid cuts, enough for 4 tacos and a little left over.
I am a “medium rarer” (I know that is not really a thing)- BUT I looooooove steak medium rare. Not medium and not too rare but with that pinky/redish center I get so much delight. My instructions to AU for this steak were very specific- “cook it medium rare please”. He succeeded [go AU!!].
The marinade on these steaks consisted of [garlic] [soy sauce] [red wine vinegar] [fresh lime juice] & [green onions] – the little tang it gave to the meal really rocked my taste buds.
One of the greatest parts about these steak tacos (other than the killer marinade) was the extremely fresh pico de gallo I paired with it. I chopped up fresh & ripe tomatoes, a jalapeno, cilantro, sweet yellow onion, and of course splashed it all with tart lime juice straight out half of a lime (using a fork).
And how can I forget the topper of all toppers… chipotle lime crema, yeah I threw that on there too!
steak tacos with fresh pico {2 servings}
flat iron beef chuck
3 medium pieces of steak- about 1.5 pounds
1/4 cup soy sauce
2 tablespoons red wine vinegar
juice of one lime
1/2 teaspoon minced/chopped garlic
1 stalk chopped green onion
P to taste
Place steaks in a gallon sized bag. Pour soy sauce, red wine vinegar, and juice the lime into the bag. Add chopped garlic and green onions on top. Season with some pepper. Shake bag until all steaks are covered. Store in fridge for an hour, flip after 30 minutes.
When steak is marinated for at least an hour, no more than 3 heat a medium sized pan to medium high heat. Spray with pam, wait till it heats up and you can feel the heat through the pan. Place steaks one side down, do not move, cook for 2-3 minutes. Flip and sear on the other side for the same amount. If steaks are larger try 3-4 minutes. Remove steaks once cooked and let rest for 3 minutes, slice thinly.
pico de gallo
2 ripe tomatoes (beefsteak/off the vine)
1/2 sweet yellow onion
1/2 jalapeno
1/2 juice of one lime
1/4 cup cilantro
S&P
Chop tomatoes, onion, and jalapeno into small chunks. Combine in a medium sized bowl. Add lime juice and chop cilantro to add last. Mix and season with S&P. Refrigerate before serving.
chipotle lime crema
1/4 cup sour cream
1/2 juice of one lime
cayenne pepper
chilli powder
1/8 teaspoon chilli flakes

Mix sour cream with lime juice in a small bowl. Add dashes of spices until you are happy with taste- this is spicy so the more you add, the hotter it will become. Finish with pepper to season.

4 flour tortillas
1/2 cup mexican shredded cheese
steak
pico de gallo
chipotle lime crema
Lay out tortillas on a large plate, cover with a moist paper towel. Right before serving microwave for 30 seconds or broil in oven. Start layering with cheese, then steak, pico de gallo, and finish with the crema. Add anymore fresh cilantro on top if you are a lover of cilantro.
Serve with chips for extra pico, you will have a lot left over!
