TOMATO BASIL CHICKEN WITH LINGUINE NOODLES
This is one of the easiest meals I have prepared to date.
The recipe is full of flavor with super ripe juicy tomatoes, fresh leaf basil, and of course some butter. Those simple ingredients are the core of this simple but flavorful pasta dish.

I found this recipe on none other than Pinterest, duh but this one caught my eye because of the simplicity.
The pasta I chose was linguine which I never really cook with but this occasion seemed appropriate. I wanted a thicker noodle than our normal spaghetti noodles that would really hold onto the sauce and not let all the buttery goodness fall behind in the bowl.

I love that this noodle dish has a protein in it as well. Using sautéed chicken keeps the meal light and fresh but full of flavor. I’m always looking for full flavor with little ingredients that come together quickly. Our schedules after work don’t allow hours for me to slave over the stove and make a home cooked meal. I do what I can and the recipes I share with you are really easy, quick, and I try to keep them simple.
That’s the way I like to cook, ALF: simple, easy, quick. I don’t overuse those words in all of my blogposts do I?!!

AU and I truly loved this meal. The tomatoes cooked until they were even more juicy then when they started in the pan. These chopped tomatoes are the star of this sauce. It is literally tomatoes, fresh basil, garlic, and butter. And then of course it is seasoned with S&P. What more could you want.
Sometimes dishes that contain the least amount of ingredients are the most delectable. I think this kind of meal gives you the opportunity to appreciate summer tomatoes and home grown basil!

AU and I are growing some basil seeds and tomato right now and he plans to transplant them today! I can’t wait to remake this dish with our tomatoes AND basil. I will probably die when I taste how good that fresh rendition will be.
AU treated us to some shaved parmesan recently on a trip to the grocery store when I requested shredded but after tasting that parmesan I don’t think you can use good old shredded on this italian one dish wonder.

TOMATO BASIL CHICKEN
Ingredients
- 2 chicken breasts
- 2 tablespoons EVOO
- 2 cups chopped tomatoes about 3 (tomatoes on the vine)
- 2 teaspoons minced garlic
- 3 tablespoons cold butter sliced into 3 pieces
- 1/2 cup fresh chopped basil
- S&P
- dried basil
- shaved parmesan for serving
- half a box of linguine noodles
Instructions
- Start prepping all of the ingredients. Hammer out the chicken breasts to slightly flatten them with a mallet. Cover the chicken with wax paper or plastic wrap before hammering. Season chicken breasts with S&P and dried basil. Set aside.
- Chop tomatoes and basil, set aside.
- Start boiling water for the noodles. Heat a medium/large sized pan with olive oil until hot. Add the chicken and cook for 4-5 minutes. Start cooking the noodles. Flip the chicken over and cook another 4 minutes.
- Toss the tomatoes into the pan and mix. Toss the fresh basil and combine gently. Add the 3 pieces of butter and let it all melt. Add the garlic and season with fresh black pepper. Mix gently to combine everything.
- Drain the noodles. Remove the chicken and slice into strips.
- Plate noodles with chicken, tomato sauce and top with shaved parmesan.

I don’t think I could of given you a more perfect springs night meal to enjoy outside, and in under 30 minutes you just can’t beat it!
