EASY BUNNY CUPCAKES

these Easy Bunny Cupcakes are the perfect thing just for you.
My go to cupcake recipe is such an easy cheat recipe. I always use a box
cake and then change it up a little bit with a few additional ingredients.
I follow the instructions on the box, add one extra egg, replace the water
with milk and bake them a little less than instructed (like 5 minutes or so).
And every single time they turn out awesome! In my mind there is no need
to bake cakes from scratch because it takes too long and is too complicated.
Not to mention this is supposed to be an “easy” recipe so there goes making a cake from scratch.
I might not make and bake my cakes from scratch but one thing I swear
by is making homemade icing. That’s the real MVP, the icing on the cake.
My mom taught me how important from scratch icing was for all cakes and cupcakes.
And it’s pretty easy to make. There’s just something so real about it.
Part of this recipe I am sharing with you (aside from the cutest bunny ears ever) is the best Chocolate Buttercream.
Literally THE BEST buttercream you’ll ever need.
I’ve probably eaten half of what I made today, but who cares. Sweets are my savior.

Little bitty bunny ears are the sweetest cupcake toppers to these Easy Bunny Cupcakes.
The bunny ears are made from marshmallows. They’re as simple as
cutting a marshmallow in half and pushing the sticky part into sprinkles.
And then of course sticking those little guys into that luscious buttercream.
I mean, how cute?
These little guys can be your party pleaser this weekend.
EASY BUNNY CUPCAKES
Notes
You can use any sprinkles you want.
Ingredients
CAKE
- 1 yellow cake box mix
- 4 eggs
- 1/3 cup vegetable oil
- 1/3 cup milk
CHOCOLATE BUTTERCREAM
- 2 sticks butter, softened
- 5 cups powdered sugar
- 4 tablespoons cocoa powder
- 5 tablespoons half n half or heavy cream
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
BUNNY EARS
- 12 marshmallows
- sprinkles
Instructions
CAKE
- Make cupcakes according to instructions.
- Let cool.
CHOCOLATE BUTTERCREAM
- Cream butter, sugar, cocoa powder, half n half, vanilla extract, and salt.
- Beat until fluffy for 5 minutes until well combined.
- Spoon buttercream into a plastic bag with a round tip.
- Pipe cupcakes and swirl icing with a knife or your finger.
BUNNY EARS
- Cut 12 marshmallows in half diagonally.
- Push halves into hundred and thousands sprinkles.
- Place two marshmallow halves on top of the cupcakes.
