BANGERS & SWEET POTATO MASH

Tonight I followed my own recipe and felt bold doing it. I made a version of bangers and mash, one of my favorite meals. I made it “half paleo” tonight. Here’s a list of the paleo ingredients and a list on the non paleo ingredients. This can TOTALLY be made either way, depending on your preference.

Serves 2

PALEO:

2 hot Italian sausages (bangers)
1 sweet potato
1/2 sweet yellow
2 tablespoons coconut milk
1 1/2 tablespoons kerrigold (grass fed butter)
Fresh spinach
1/4 cup red wine, I used merlot
1/4 cup hot water
Chopped garlic
thyme, s&p for tasting

NON PALEO:
1 1/2 teaspoons instant gravy mix

First start the bangers in a sautée pan. Continue to turn once brown on each side and keep blackening and cooking, I like the skin blackish and crispy. It’s more yummy that way. When you start the sausages start caramelizing the onions in 1 tablespoon of the butter. Cook on middle heat and as they start to brown turn to low. You want them to continue to cook for a long time. Wash and cut the skin off the potato and cut into even chunks. Start boiling the water for the potatoes.

Cook the potatoes, sausages, and onions at the same time, in separate pans and pots. Once onions are brown cover with wine and simmer. Once wine is soaked into the onions add mix and hot water and keep stirring. Keep heat low and stir constantly. Remember to keep flipping sausages. When sausages are finished cooking on medium heat about 15-20 minutes, add spinach. Cut into the sausage to check if it is cooked on the inside. I used the same pan as the sausages and wilted the spinach on the side! That’s called efficiency, or laziness of cleaning 5 million pots…

The trick to this meal is eating everything hot, it’s a science sometimes. Drain potatoes, place sausages on paper towel to remove excess grease. Mix 1/2 tablespoon butter into potatoes with coconut milk and spices. Mix and mash thoroughly. Plate potatoes, wilted spinach, bangers, and onion gravy. I like ALOT of gravy.

I hope this paleo recipe, without the gravy mix, is satisfying because for me it felt wonderful before, during, and after eating it. I absolutely loved this recipe, probably because it was right up my alley.

Tonight I skipped my baked plantain desert and instead settled on red wine and dark chocolate. It totally hit the sweet spot.
